2022 Barrel Select Viognier

Opening notes of white flowers and orange blossoms lead into Pomelo and Cantaloupe. The slow cold primary fermentation and partial malolactic fermentation create a viscous mouthfeel that frames honeydew and Shinko Asian pears.

Mahon

Pale yellow in color with numerous eyes in the cheese, this four-month-aged cheese has a characteristic orange rind. Creamy with a nutty finish, Mahon is versatile in the kitchen.

2021 Mourvèdre

Inviting aromas of bright cranberry offer a burst of red fruit while vanilla spice introduces a deeper and more complex aromatic component. On the palate, cranberry and brambleberry dominate the forefront, while contributing a rich and dark berry character.

Gruyère

Imported from Switzerland since the 12th Century, Gruyère is one of the most famous Swiss cheeses. It is made from cow’s milk & formed into huge 70lb. wheels in the Alps. Gruyère has an unmistakable nutty, complex, slightly sweet flavor with caramel notes.

2019 Amerhône

Opening aromas of currant, blackberry and maple syrup set the stage for an explosion of strawberry, rhubarb pie, vanilla essence, baking spice and freshly ground ginger.

Pesto Lavender Gouda

This purple semi-soft lavender gouda is creamy with a floral burst, notes of rosemary and anise, is sure to please a more sophisticated group looking for some powerful earthy notes and a gorgeous unique color sprinkled with dried herbs.

2019 Petite Sirah

The essence of anise opens to a touch of raspberry and cherry cola on the nose. While dark fruits such as blackberry and blueberry mix with the deep rich tannins for an old-world lingering finish.

My Lamb-Borghini

A matured, gouda-style cheese. Made from pasteurized sheep’s milk, and aged for 3-6 months. Flavors are sweet and buttery at initial stage of ripening but develop an incredible sweetness of caramels and nutty undertones as it fully matures.

2019 Nikiara

On the nose hints of black currant and blueberry lead into cedar, cardamom, and turmeric aromas. A full-bodied mouthfeel that has rich fruit notes of fresh black cherry and plum that finish with pistachio and baking spice flavors.

Red Dragon

This smooth, firm tasty Cheddar is made with Welsh brown ale and mustard seeds. Red Dragon is a buttery and spicy cheese with plenty of bite. The brown ale makes the cheese moist and tangy. Red Dragon is aged for 3 months, made from cow’s milk and is vegetarian.
